Lemon Tarts
Seasons Bistro
(Makes 9 4inch tarts)

3/4 C Sugar
1 Tablespoon All Purpose Flour
Pinch Salt
1 Teaspoon Lemon Zest
2/3 Cup Fresh Lemon Juice (About 4 Lemons)
3 Whole Eggs and 1 Yolk
½ Teaspoon Vanilla
1 Tablespoon Butter
9 4 inch unbaked tart shells
Whisk the flour, lemon zest, salt, and sugar together. Add lemon juice and mix until the sugar is dissolved. Whisk the eggs and vanilla, then combine into the lemon mix. Fill tarts and bake at 325°F for 20-30 minutes. The tarts should have a light jiggle feel like a gummy bear.

These tarts are great with a tumble of fresh fruit over them.
